Whole pollack (Pollachius pollachius) range in size from 500g–3kg. The flesh is white but with a slightly beige tinge and pollack have a more muted flavour than cod.
Pollack fillets are an excellent choice for battering and deep frying, and can be a great value option for use in hearty fish stews or curries.
Pollack is closely related to coley and the two species can easily be interchanged in many recipes.
